Delissio Rustico has come out with some amazing pizzas that I couldn’t wait to try, my two favourites being the Quattro Formaggi and Greek pizza. The Rustico line is just as fancy as the name sounds, using elevated ingredients and having a stone baked thin crust. My favourite! But as delicious as they are on their own, it’s always fun to put your own spin on them with a few ingredients while keeping things easy-peasy!
With the Quattro Formaggi having cheeses like emmental and blue, I decided to pair it with caramelized onions sautéed in balsamic vinegar, freshly chopped basil to keep things fresh, and because there’s no such thing as too much cheese…grated parmesan! And not to toot my own horn, it was kind of out of this world delicious. Just saying.
Next up was the Greek pizza! I love me some feta and veggies so this style was right up my alley. I’ve eaten one or two pizzas in my day and personally think there is nothing better than fresh cherry tomatoes. So minutes before the pizza was finished I sprinkled some on top along with fresh spinach for an extra crunch! And just like the Quattro Fromaggi I added more cheese with some crumbled feta. What can I say, I love cheese.
From start to finish I think the whole process took only about a half an hour! So with nothing on our plates for the rest of the evening; literally nothing as we ate both pizzas! We were able to enjoy a relaxing date night in. I honestly can’t tell you which one I liked best so be sure to pick them up on your next grocery shop (both varieties are available from local grocery stores) and I’ll let you guys be the judge!
